Low Carb Meatballs -- easy healthy recipe

Here are our tasty low carb meatballs. It is an easy healthy recipe. These are from our low carb ultra-easy Paleo recipes, and Paleo nutrition is well known for health and weight loss.

This is an excellent appetizer, or snack, or main meal if served with a green salad or green low carb vegetables for lunch or dinner.

The recipe yields four servings. Increase or decrease the ingredient quantities if more or fewer meatballs are required.

Ingredients for the Low Carb Meatballs

( a ) 1½ lbs of ground (minced) beefsteak, preferably grass-fed or organic

( b ) 8 scallions (spring onions) finely chopped

( c ) 1 tablespoon of coconut butter/oil

( d ) 2 garlic cloves (optional) finely minced

( e ) 2 organic eggs, beaten

( f ) Optional ½ cup grated Parmesan cheese (not to be included if you are following a Paleo diet)

( g ) ½ teaspoon of sage (optional)

( h ) ¼ teaspoon freshly ground black pepper

( i ) ½ teaspoon of sea salt

( j ) 1 bunch of chopped cilantro (coriander) to garnish

Recipe Method for the Low Carb Meatballs

Before we move on with the low carb meatballs method, in case you have use of one, here is a general Oven Temperature Conversion Chart. It gives conversions for Fahrenheit, Celsius, Gas Mark, and Terms Used. Print it out if you wish and use for reference whenever needed.

200 degrees °C 400 degrees °F 6 This is moderately hot cooking
220 degrees °C 425 degrees °F 7 This is hot cooking

245 degrees °C 475 degrees °F 9 This is hot cooking
260 degrees °C 500 degrees °F 10 This is for very hot cooking

Heat the oven to 375 degrees Fahrenheit or the equivalent from the oven conversion chart above.

In a skillet, gently cook the chopped scallions (spring onions) with the minced garlic until slightly softened.

In a large bowl, mix the softened scallions and garlic, with the ground beef, sage, cheese, beaten eggs, salt, and pepper. Divide the mixture into meatballs, each approximately 1½ inch (the size of a golf ball).

Arrange the meatballs on a baking sheet and bake in the oven for 25 minutes.

When cooked, sprinkle with the chopped cilantro (coriander) and serve hot as an appetizer or snack. Alternatively, serve with a fresh green salad or low carb leafy green vegetables.

This baked meatball recipe yields 4 small servings (increase or decrease the ingredient quantities if more or fewer meatballs are required):

Low carb vegetables play an important part in a healthy low carb diet. However, not all vegetables are equal in carbohydrates. Some are relatively high in carbohydrates. So, choose wisely.
