Low Carb Meatballs
These low carb meatballs are tasty as well as quick and easy to make for either a general low carb diet, or a Paleo diet.
The recipe yields four small servings. Halve, double or treble the ingredient quantities to meet your requirements.
This is an excellent low carbohydrate meal for weight loss. Serve with a green salad or low carb vegetables for a healthy balanced meal.

Ingredients for Low Carb Meatballs
It's best to use organic ingredients if possible.
Low Carb Meatballs Recipe Method
Heat the oven to 375 degrees.
In a skillet, gently cook the chopped scallions (spring onions) with the minced garlic until slightly softened.
In a large bowl, mix the softened scallions and garlic, with the ground beef, sage, cheese, beaten eggs, salt, and pepper. Divide the mixture into meatballs, each approximately 1½ inch (the size of a golf ball).
Arrange the meatballs on a baking sheet and bake in the oven for 25 minutes.
When cooked, sprinkle with the chopped cilantro (coriander) and serve hot with a fresh green salad or low carb vegetables.
