Low Carb Meatball Recipe
Easy Low Carb Meatballs


These low carb meatballs are quick and easy to make. The recipe yields four tasty servings. Halve or quarter the recipe if fewer meatballs are required.

This is a good low carbohydrate meal for weight loss. Serve with a green salad or low carb vegetables.

The meatball mixture can be prepared a few hours or a day ahead of cooking and kept refrigerated until required.


Low carb meatball recipe: ingredients


  • 1 ½ lbs of ground (minced) beefsteak (preferably grass-fed or organic)
  • 8 scallions (spring onions) finely chopped
  • 1 tablespoon of extra virgin olive oil
  • 2 garlic cloves (optional) finely minced
  • 2 organic eggs, beaten
  • 1/2 cup grated Parmesan cheese
  • ½ teaspoon of sage (optional)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon of sea salt
  • 1 bunch of chopped cilantro (coriander) to garnish

Use organic ingredients as much as possible.

Low carb meatball recipe: method


Heat the oven to 375 degrees.

In a skillet, gently cook the chopped scallions (spring onions) with the minced garlic until slightly softened.

In a large bowl, mix the softened scallions and garlic, with the ground beef, sage, cheese, beaten eggs, salt, and pepper. Divide the mixture into meatballs, each approximately 1½ inch (the size of a golf ball).

Arrange the meatballs on a baking sheet and bake in the oven for 25 minutes.

When cooked, sprinkle with the chopped cilantro (coriander) and serve hot with a fresh green salad or low carb vegetables.

This baked meatball recipe yields 4 servings.
