Recipe for Cucumber Salad Greek-Style


This cool cucumber salad recipe produces a tasty combination of cucumber and tomato salad with onion, mint, feta, garlic, lemon juice and olive oil.

It is a delicious Greek style salad and a quick and easy recipe. It can be prepared several hours before needed or even the day before.

This recipe yields four portions. Double or halve the ingredients if more or less portions are required.

This recipe for cucumber salad contains feta cheese and is therefore not suitable for those who are following a Paleolithic diet. The salad is still delicious without the feta.


Cucumber Salad Recipe: Ingredients

  • 2 cucumbers peeled and diced
  • 1 red onion finely chopped
  • 4 large good quality fresh diced tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup freshly squeezed lime or lemon juice
  • 1 fresh garlic cloves minced (optional, or if you like garlic use 2 cloves)
  • 3 tablespoons chopped fresh mint (or 1 tablespoon of finely rubbed dried mint)
  • 8 ounces of crumbled feta cheese
  • 1/4 cup pitted sliced black olives (optional)
  • sea salt and freshly ground black pepper according to taste

Use organic ingredients as far as possible.

Cucumber Salad Recipe: Method

Place all the ingredients in a bowl and toss well. Add salt and pepper to taste. Then chill for 2 to 3 hours for the full flavors to come out.

Be sure to add salt before chilling.

The salt brings out the flavorsome juices from the tomato and cucumber when left to marinate for several hours. This dish can be prepared several hours before needed or even the day before.
